- Vinification (white): Double-sorted on a vibrating table and a sorting table. Pressed with whole clusters, cold settled. Minimal SO2 addition to the musts. Ambient yeast fermentation and aging for 12-24 months in 225-600L barrels (0-30% new), rarely stirred. No fining and gentle filtration if necessary.
- Vinification (red): Double-sorted on a vibrating table and a sorting table. Entirely or partially de-stemmed. Minimal SO2 addition to the musts. 12-25 day ambient yeast fermentation in open vats with punch-downs and pump-overs. Aged for 12-24 months in barrels (0-30% new). No fining and gentle filtration if necessary.
